We’re back with another round of yummy recipes for you, babe! Let’s rock brunch at home this weekend together. Today’s menu are Chia Mango Smoothies and Cottage Cheese Pancakes from Martha VanCamp of Be Fit Systems. All of Martha’s delicious recipes are designed to have lots of flavor but also provide you with nutrients to fuel you for the day. Grab a plate & let’s dig in!

Chia Mango Smoothie


Preparation time: 5 to 10 minutes

Serves 1

Ingredients:

  • 2 tbsp chia seeds

  • 1/2 cup unsweetened almond milk

  • 1 small banana

  • 1/2 cup chopped mango

  • 1 scoop whey protein power

 Optional: Ice cubes

Preparation:

1. Combine all ingredients in blender and blend until desired consistency.

2. Add a sprig of mint and enjoy!

Cottage Cheese Pancakes


Preparation time: 20 minutes

Serves 1

Ingredients:

1/2 cup oats

1/2 cup low-fat cottage cheese

1 tsp vanilla extract

4 egg whites

1 small banana

Preparation:

1. Blend all ingredients together in a blender.

2. On medium heat, spray skillet with PAM and pour batter to form pancake shape.

3. Brown both sides of each pancake and serve with your favorite syrup and a handful of sliced banana. Enjoy!
