Make Fall Breakfast Cookies!

It’s officially been Fall for a week! If you’re in Florida like we are, it might not always feel like it ‘cuz of this toasty weather, BUT, recipes like this can definitely help you get in the spirit of the season. I worked on this recipe with my friend & blog collaborator, Sarah Maingot and we chose to put a spin on Breakfast Cookies because of how much we both love to make breakfast at home on the weekends. Also, you know it’s going to be good if it has some pumpkin seeds and cinnamon in the mix!

I hope you enjoy making this recipe this weekend! You can find all these tasty ingredients at your local Rollin’ Oats. Shout out to our Community Partner, Rollin’ Oats for making our year even more delicious. Cheers to Fall and the rest of your amazing year, babes! -Gina

Fall Breakfast Cookies

This recipe makes 20 cookies!

Ingredients:

2 cups oats

1 tsp baking powder

1 cup flour

1/3 cup dried cranberries

2 bananas (mashed)

1 cup salted pumpkin seeds

1/4 cup chia seeds

2 tsp cinnamon

2 tbsp almond milk

2 tbsp maple syrup

2 cans of Made Coffee’s Chai Cold Brew

Preparation:

Step 1 // Preheat oven to 375 degrees. Combine dry baking ingredients into bowl. Add wet ingredients and mix throughly.

Step 2 // Bake for 15 minutes.

Step 3 // Allow cookies to cool for a few minutes before enjoying. Add your favorite Made Coffee cold brew drink and add a paper straw. Enjoy!

Bonus Tip: If you’d prefer a flatter shaped cookie, smooth them down before you bake, babe!

All of these ingredients can be found at Rollin’ Oats! Did you know they have 2 locations— there’s a St. Pete location on 2842 Dr M.L.K. Jr St N and in Tampa at 1021 N Macdill Ave.

During our shoots we like to measure out all the ingredients at once! We love this recipe because of all the warm colors & textures. It’s pretty yummy, too. ;)

Mix it up, girl!

We like the round cookie shape, but if you like a flatter shape, you can smoosh them down before they bake!

Here they are all baked up! The cinnamon smells amazzzzzing when they’re just out of the oven!

Place your cookies on a rack so they can cool down for a bit.

They’re ready to be enjoyed!

Pour yourself a glass of Made Coffee’s Chai Cold Brew & enjoy!
