Make Avocado Brownies!

I hope you’re ready for something fun & out of the box, Babes! Sarah & I had an awesome time making (and eating!) this Avocado Brownie recipe. It makes enough for up to 12 or more, depending on how small you cut the slices and I brought the leftovers after we had eaten enough for a lifetime into my boyfriend’s office and they were a HIT. Several of his coworkers asked for the recipe and plan to make them at home soon. SO. I think you’re gonna have the same reaction once you see these images. These brownies are dense & fudge-like. We took inspiration from Fake Ginger & The Healthy Maven. You could make a gluten free version if you used coconut flour, but for our recipe we used classic baking flour and substituted the extra oils with avocado and that basically makes these into fruit bars instead of dessert bars. :P Kidding! But they are rich in fiber and fatty acids, and of course they’re extremely delicious. Let us know how yours turn out! Stay boss. xx

Serves 12

Prep Time: 20 minutes

Cook Time: 30 minutes

 

Ingredients:

1 cup chocolate chips

1 cup granulated sugar

1 teaspoon vanilla extract

1 cup baking flour

1/2 teaspoon salt

1/4 cup cocoa powder

4 cage free, free range eggs

2 ripe avocados

 

Preparation:

Step 1. Grease your baking pan and reserve. Pre-heat the oven to 350 degrees. Next, melt your chocolate chips in a glass measuring cup in 30 second increments. Stir in between microwave sessions to make sure the chips are fully melted and reserve. 

Step 2. Scoop the avocados into a bowl and toss the skin (or put them in the compost if you’ve got one!). Add your sugar and mix completely. Add your eggs and vanilla extract to the mixture. In a separate bowl, combine flour, salt, and cocoa powder. Slowly add the dry mixture to the chocolate and avocado bowl. Add your brownie mixture to the baking pan and bake for 30 minutes. Allow the pan to cool for 7 to 10 minutes.

Step 3. Use a knife to slice the brownie into the sizes you prefer. Build a brownie tower on a cute cake stand with glasses of milk within reach and let Boss Babe serve themselves. Enjoy!
