Make Sparkling Cucumber Mint Cocktails!

Happy Friday Eve, Babes! For our second Girls Night Recipes post we thought it’d be best if there were spirits involved. ;) It’s summer, and what better way to soak it all in than with a little rum? #trickquestion This cocktail can be made with the silver spirit of your choice. The recipe was inspired by the new herbs we have growing in our garden at home. We have fresh mint, rosemary, and basil, so this was extra fun to craft because we were able to pick the biggest & best sprigs. If you have fresh mint, use it! If not, that’s okay, because your nearest grocery store has a great selection of mint waiting just for you. This recipe will make 2 Sparkling Cucumber Mint Cocktails. If you need to make more or less, feel free to adjust the amounts. This recipe will take approximately 20 minute to prepare. Enjoy!

Ingredients:

14 fresh mint leaves

1 lime

6 thin, round slices of English Cucumber 

6 tsp granulated sugar

(2) 12 oz cans of Cucumber Mint sparkling water

3 oz silver rum 

1 cup of ice

Preparation:

Step 1: If your mint is pulled from your garden, gently rinse it with water and lay on a kitchen towel to air dry for a few minutes. Pull each mint leaf off of its sprig ensuring that the entire leaf remains intact. Each cocktail will need 6 leaves for the muddling process and 1 leaf to rim the glass. Place the mint leaves for muddling at the bottom of your mason jars.

Step 2: Slice your lime into wedges and add 2 to each glass as well as 2 cucumber slices. Add 3 teaspoons of sugar to each glass, then muddle all the contents thoroughly.

Step 3: Add 1/2 cup of ice to each glass (or more if you’d like). Add one and half ounces of silver rum and almost a full can of cucumber mint sparkling water to each jar. Stir.

Step 4: Grab a fresh mint leaf. With the leaf folded over the rim of the glass, rub the leaf around the entire rim to add extra essence to the cocktail. Do this for the second glass as well with another fresh mint leaf. 

Step 5: Take the remaining 2 cucumber slices and cut a slice from the center to one edge. Place a slice on each glass rim. Add a colorful paper straw to both cocktails and enjoy a slice of summer!
